How to Make Perfect Ugali and Sukuma Wiki – A Classic Kenyan Dish

Learn how to make authentic Kenyan ugali and sukuma wiki, a simple yet delicious meal loved across Kenya. This recipe combines soft, fluffy ugali with flavorful, sautéed sukuma wiki (collard greens), creating a wholesome dish that’s perfect for lunch or dinner.

Ingredients:

For Ugali:

  • 2 cups maize flour (cornmeal)
  • 4 cups water
  • Pinch of salt (optional)

For Sukuma Wiki:

  • 1 bunch sukuma wiki (collard greens), washed and chopped
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 1–2 cloves garlic, minced (optional)
  • Salt and pepper to taste

Instructions:

Ugali:

  1. Bring 4 cups of water to a boil in a saucepan.
  2. Add a pinch of salt if using. Gradually add the maize flour while stirring continuously to prevent lumps.
  3. Lower the heat and keep stirring until the mixture thickens and pulls away from the sides of the pan.
  4. Once thick, cover and let it steam for 2–3 minutes.
  5. Serve hot, shaping into a round mound or leaving it in the pan.

Sukuma Wiki:

  1. Heat oil in a pan over medium heat. Add onions and garlic, sauté until soft and fragrant.
  2. Add chopped tomatoes and cook until they soften and release their juices.
  3. Add the chopped sukuma wiki, stirring well to coat with the tomato-onion mixture.
  4. Cook for 5–7 minutes until the greens are tender but still bright green. Season with salt and pepper.
  5. Serve immediately alongside hot ugali.

Tips:

  • For extra flavor, add a few chili slices or a teaspoon of tomato paste to the sukuma wiki.
  • Use fresh sukuma wiki for the best texture and taste.
  • Ugali is best served immediately while hot and soft.
