How to Make Perfect Ugali and Sukuma Wiki – A Classic Kenyan Dish
Learn how to make authentic Kenyan ugali and sukuma wiki, a simple yet delicious meal loved across Kenya. This recipe combines soft, fluffy ugali with flavorful, sautéed sukuma wiki (collard greens), creating a wholesome dish that’s perfect for lunch or dinner.
Ingredients:
For Ugali:
- 2 cups maize flour (cornmeal)
- 4 cups water
- Pinch of salt (optional)
For Sukuma Wiki:
- 1 bunch sukuma wiki (collard greens), washed and chopped
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 1–2 cloves garlic, minced (optional)
- Salt and pepper to taste
Instructions:
Ugali:
- Bring 4 cups of water to a boil in a saucepan.
- Add a pinch of salt if using. Gradually add the maize flour while stirring continuously to prevent lumps.
- Lower the heat and keep stirring until the mixture thickens and pulls away from the sides of the pan.
- Once thick, cover and let it steam for 2–3 minutes.
- Serve hot, shaping into a round mound or leaving it in the pan.
Sukuma Wiki:
- Heat oil in a pan over medium heat. Add onions and garlic, sauté until soft and fragrant.
- Add chopped tomatoes and cook until they soften and release their juices.
- Add the chopped sukuma wiki, stirring well to coat with the tomato-onion mixture.
- Cook for 5–7 minutes until the greens are tender but still bright green. Season with salt and pepper.
- Serve immediately alongside hot ugali.
Tips:
- For extra flavor, add a few chili slices or a teaspoon of tomato paste to the sukuma wiki.
- Use fresh sukuma wiki for the best texture and taste.
- Ugali is best served immediately while hot and soft.
