How to Make Authentic Kenyan Goat Choma (Mbuzi Choma)

  • 2 kg goat ribs

  • 2 tablespoons vegetable oil

  • 1 teaspoon black pepper
  • 1 teaspoon paprika (optional, for color and mild flavor)
  • Juice of 1 lemon
  • 1 teaspoon ground ginger (optional)
  • Fresh rosemary or thyme sprigs (optional)

Instructions:

  1. Prepare the Marinade: In a large bowl, combine garlic, onion, oil, salt, pepper, paprika, lemon juice, ginger, and herbs. Mix well.
  2. Marinate the Goat Ribs: Rub the marinade thoroughly over all sides of the ribs. Cover and refrigerate for at least 2 hours, or overnight for maximum flavor.
  3. Preheat the Grill: Light charcoal or preheat a gas grill. Make sure the grates are clean and lightly oiled.
