How to Make Authentic Kenyan Githeri – Hearty, Nutritious, and Flavorful

Enjoy the comforting taste of Kenyan Githeri, a traditional one-pot dish made with maize and beans. Packed with protein and flavor, Githeri is a staple in many Kenyan households and can be enjoyed as a main meal or a side dish. It’s simple to prepare, wholesome, and perfect for family meals or school lunchboxes.

Ingredients (Serves 4–6):

  • 2 cups soft/dried maize
  • 2 cups soft/dried beans
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 tablespoons vegetable oil
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon paprika (optional)
  • 1–2 green chili peppers, chopped (optional for spice)
  • 4 cups water or vegetable stock
  • Fresh coriander or parsley for garnish

Instructions:

  1. Soak the Beans and Maize: If using dried beans and dried maize, soak them overnight in water to soften. Drain before cooking.
  2. Cook the Maize and Beans: In a large pot, add maize, beans, and water or stock. Bring to a boil, then reduce heat and simmer until the maize and beans are tender (about 1–2 hours).
  3. Prepare the Aromatics: In a separate pan, heat oil and sauté onions, garlic, and ginger until fragrant and golden. Add tomatoes and cook until soft.
  4. Combine: Add the sautéed mixture to the cooked maize and beans. Stir well. Season with salt, black pepper, paprika, and green chilies if using. Simmer for 10–15 minutes to allow the flavors to meld.
  5. Serve: Garnish with fresh coriander or parsley. Serve hot on its own or as a side dish with Beef stew or even Rice

  • For a richer flavor, cook Githeri in beef, chicken, or vegetable stock instead of water.
