Discover the mouthwatering taste of Kenyan Beef Choma, a traditional barbecue dish beloved across Kenya. Perfectly grilled, smoky, and juicy, this dish is a favorite at family gatherings, roadside grills, and weekend cookouts. Beef Choma pairs beautifully with kachumbari, ugali, or sukuma wiki, creating a complete and satisfying Kenyan meal.
Ingredients (Serves 4–6):
- 2 kg beef (rib or sirloin cuts work best), cut into chunks or strips
- 4 cloves garlic, minced
- 1 large onion, finely chopped
- 2 tablespoons vegetable oil
- 2 teaspoons salt (or to taste)
- 1 teaspoon black pepper
- 1 teaspoon paprika (optional, for color and mild flavor)
- Juice of 1 lemon
- Fresh rosemary or thyme sprigs (optional)
Instructions:
- Prepare the Marinade: In a large bowl, combine garlic, onion, oil, salt, pepper, paprika, lemon juice, and herbs. Mix thoroughly.
- Marinate the Beef: Rub the marinade over all pieces of beef, ensuring even coverage. Cover and refrigerate for at least 2 hours, or overnight for maximum flavor.
- Preheat the Grill: Light charcoal or preheat a gas grill. Make sure the grates are clean and lightly oiled.
- Grill the Beef: Place the marinated beef chunks on the grill. Cook over medium heat, turning occasionally, until browned and cooked to your desired doneness (about 20–30 minutes depending on chunk size).
- Check for Doneness: For safe consumption, beef should reach an internal temperature of 63°C (145°F) for medium-rare or 70°C (160°F) for medium.
- Rest the Beef: Remove from heat and let rest for 5 minutes to lock in juices.
- Serve: Serve hot with kachumbari, ugali, or sukuma wiki. Garnish with fresh herbs if desired.
Serving Tips:
- Baste the beef with leftover marinade while grilling for extra flavor.
- Pair with a cold Kenyan soda or chai for an authentic experience.
- For a smoky flavor, add wood chips to charcoal or grill over an open fire.
Variations:
- Spicy Beef Choma: Add chili powder, cayenne, or fresh chilies to the marinade.
- Lemon-Herb Beef Choma: Increase lemon juice and fresh herbs for a zesty flavor.
- Oven-Baked Option: If you don’t have a grill, bake at 200°C (400°F) for 25–35 minutes, turning halfway.
